Tempura Soft Shelled Crab |

4 Soft Shell Crabs (cleaned) |
1 dash Tabasco 1 Egg Yolk 11/2 cup Blended Oil 1/4 cup Water |

In mixing bowl combine flour, ice, club soda and salt. Stir gently with a spoon until just combined. The batter will have some lumps in it. Coat the crab in the batter and deep fry until crispy (about 3-4 minutes). Drain on paper towel and season with sea salt. Serve with avocado mayonnaise. Avocado Mayonnaise – Remove avocado from shell and discard seed. Using a blender mixer combine the avocado, lemon juice, egg yolk and Tabasco and process until smooth. Slowly drizzle in oil and water to emulsify. Season with salt and pepper to taste. Serves 4
