Tempura Soft Shelled Crab

Ingredients
 

4 Soft Shell Crabs (cleaned)
2 cup All Purpose Flour
1/2 cup Ice Cubes
3/4-C Club Soda
Oil for Deep Frying
1 Tbsp Salt
Sea Salt for Seasoning
Avocado Mayonnaise
Avocado Mayonnaise
1 Avocado
2 Tbsp Lemon Juice

1 dash Tabasco
1 Egg Yolk
11/2 cup Blended Oil
1/4 cup Water
Directions
 

In mixing bowl combine flour, ice, club soda and salt. Stir gently with a spoon until just combined. The batter will have some lumps in it. Coat the crab in the batter and deep fry until crispy (about 3-4 minutes). Drain on paper towel and season with sea salt. Serve with avocado mayonnaise.

Avocado Mayonnaise – Remove avocado from shell and discard seed. Using a blender mixer combine the avocado, lemon juice, egg yolk and Tabasco and process until smooth. Slowly drizzle in oil and water to emulsify. Season with salt and pepper to taste.
