New England Sweet & Sour Salmon |

1-lb Salmon Filet Sweet & Sour

Lightly coat salmon with olive oil, sprinkle on the flour and encrust with 4 ounces of ground macadamia nuts. Place filet in lightly oiled non-stick skillet on medium heat and cover; don’t over heat or you’ll burn your nuts. Heat the sweet & sour ingredients and reduce by 1/3. Place ¼ of cooked salmon on 1 cup of rice in center of the plate and cover with sauce and remaining nuts as garnish. Serves 4
