New England Sweet & Sour Salmon

Ingredients
 

1-lb Salmon Filet
6-oz. Macadamia Nuts
4-cups Long Grain Wild Rice (cooked)
1 pinch Flour

Sweet & Sour
2-tsp Ketchup
6-tsp Maple Syrup
4-tsp Apple Cider Vinegar
4-tsp Water
6 drops Lemon Juice

 

 

Directions
 

Lightly coat salmon with olive oil, sprinkle on the flour and encrust with 4 ounces of ground macadamia nuts. Place filet in lightly oiled non-stick skillet on medium heat and cover; don’t over heat or you’ll burn your nuts.

Heat the sweet & sour ingredients and reduce by 1/3. Place ¼ of cooked salmon on 1 cup of rice in center of the plate and cover with sauce and remaining nuts as garnish.
