Indian Pudding
 
Ingredients
 

1-cup Yellow Granulated Cornmeal
1/2-cup Black Molasses
1/4-cup Granulated Sugar
1/4-cup Lard or Butter
1/4-tsp Salt
1/4-tsp Baking Soda
2 Eggs
1/2-quarts Hot Milk

  Directions
 

1. Preheat over 275°.

2. Heat milk and butter in a saucepan and bring to a boil.

3. Now add the cornmeal and continue to heat on a low setting. Stir and let the mix thicken.

4. Once thickened - remove from the heat and add the remaining butter, black molasses, eggs.

5. Once mix pour in a greased mold or dish and bake for 90 minutes. About 30 minutes in add pour some cold milk on top and continue to bake until the top is browned.

   Serves 5
