Squash with Orange and Cinnamon
 
Ingredients
 

2 acorn squashes
olive oil
1/4-1/2 cup orange juice
2+ teaspoons ground cinnamon
salt and pepper to taste

  Directions
 

Preheat the oven to 400°

Split the squash lengthwise VERY carefully, as it’s thick and dense.  Scoop out the seeds.  You don’t have to peel the squash.

Spread a thin layer of olive oil over the squash pieces, and sprinkle with salt and pepper.  Place cut side down on a sheet pan, and bake in the oven.  Bake it for 45-60 minutes, or until a knife can easily go through the squash.  Remove from the oven, and cool until it can be easily handled.

Scoop the flesh away from the skin, and discard the skin.  Mash the squash, and add the orange juice and  cinnamon.  Season to taste with salt and pepper.

Note:  You can use other winter squashes, including acorn squash.

   Serves 4
