Corn Chowder

Corn Chowder
 
Ingredients
 

6 Slices Bacon
2 Onions (diced)
2 Garlic Cloves
½ Cup Flour
1 cup White Wine
1 Sprig Fresh Thyme
1 Bay Leaf
3 ½-Qt Fish Stock or Clam Juice

  2 lb. Fresh Corn
2 lb. Red Potatoes
2 lb. Crabmeat
1 pt Hot Milk
1 pt Whipping Cream
½ Cup Fresh Basil
Salt & Pepper



Directions
 

1. Render bacon, add onions and sauté till soft. Add garlic and sauté one minute. Add flour. Cook out for five minute. Deglaze with white wine.

2. Add stock and seasonings – cook out (simmer for 30-minutes). Add fresh corn, potatoes and crabmeat. Bring back to a simmer.

3. Add hot milk and whipping cream. Season to taste with salt and pepper.
