Crabmeat Parmesan Triangles |

1 cup (1/2 pound) fresh lump crabmeat |

Combine the crabmeat, mayonnaise, parmesan, and scallions. Refrigerate for at least two hours, and up to one day. After its chilled, add salt and pepper to taste. Preheat the oven to 400°. On a sheet pan (or two, if needed) toast bread triangles until they are golden, about 5-7 minutes . This can be done 1 day in advance. Reduce oven to 350°. Spread the crab mixture on toast. Bake for 5 minutes, or until heated through. Makes approximately 60 appetizers. Note: You can use Melba Snack crackers instead of toast. They work well, but the toast is better.Serves 10 |
