Crabmeat Parmesan Triangles
 
Ingredients
 

1 cup (1/2 pound) fresh lump crabmeat
2/3 cup mayonnaise
2/3 cup parmesan cheese
4 scallions, sliced
Salt and pepper to taste
15 slices white bread (like Pepperidge Farm) crusts removed, and cut into 4 triangles

  Directions
 

Combine the crabmeat, mayonnaise, parmesan, and scallions. Refrigerate for at least two hours, and up to one day. After its chilled, add salt and pepper to taste.

Preheat the oven to 400°. On a sheet pan (or two, if needed) toast bread triangles until they are golden, about 5-7 minutes . This can be done 1 day in advance.

Reduce oven to 350°. Spread the crab mixture on toast. Bake for 5 minutes, or until heated through.

Makes approximately 60 appetizers.

Note: You can use Melba Snack crackers instead of toast. They work well, but the toast is better.
